We work with small farms through transparent supply chains — farmers know exactly what they receive, and we know exactly what we roast. No middlemen. No shortcuts. Our beans come from Colombia, Ethiopia and Brazil — chosen for flavour profile and verified production quality.
Our Bellwether Coffee roaster doesn’t use gas — zero CO₂ emissions in the roasting process. We roast in small batches here in Mallorca every week. The result is fresher coffee with cleaner roast profiles.
Available in 250g bags to take away. Coming soon online. We work with origins from all over the world — Colombia, Ethiopia, Brazil, and many more. Our selection changes according to the season and what inspires us at the moment. If you have a favorite origin, just ask us — it might just be on the way.

This lot comes from women farmers in the Cerrado Mineiro region and is sourced through the Café Delas Program, which supports female producers by expanding access to resources, training, and market visibility.
Each Café Delas coffee is 100% grown by women, and a portion of every sale is reinvested into programs that promote gender equality and strengthen opportunities for women in the coffee sector.

Colombia Dulima represents the classic cup profile of central and southern Huila, one of Colombia’s most renowned coffee regions.
The fertile volcanic soils, high altitudes, and diverse microclimates create ideal conditions for producing coffees with bright acidity, sweetness, and excellent balance.
Konga bloom — Ethiopia

This Grade 1 natural-processed lot comes from the Konga Amederaro washing station in Konga village, Yirgacheffe. Located at 2,000 masl, the station works with 1,890 local farmers, supported by the Toracho River.
Farmers typically grow JARC, an Ethiopian heritage sub-variety, in small “garden coffee” plots around their homes. The shade-grown cherries are selectively harvested based on Brix readings, then undergo careful hand-sorting and flotation at the station.

Bellwether digital system
Thanks to the digital system of Bellwether Coffee, we’ve developed exclusive roast profiles. You won’t find this flavour anywhere else; it’s our personal signature. Our roaster is 100% electric and gas-free, meaning a cleaner roast where only the origin of the bean shines, without any residual combustion notes.
Coffee loses its freshness just a few days after roasting. That’s why we roast daily in small batches, ensuring a flavour that industrial coffee simply can’t match.
